Meatball Minestrone

Ingredients:

  • 400g pork mince
  • 2 Continental beef stock pot sensations
  • 1 tbs extra virgin olive oil
  • 400g Woolworths diced tomatoes with basil & oregano
  • 125g dried Vetta smart fibre spaghetti, broken into 4-5cm pieces
  • 500g Woolworths winter veg mix
  • 30g Woolworths Australian parmesan, finely grated

Cooking Method

  1. Combine mince and half of one stock pot in a large bowl. Using 1 tbs at a time, roll mixture into meatballs.
  2. Heat oil in a large saucepan over medium-high heat. Cook meatballs for 10 minutes or until browned. Transfer meatballs to a large plate.
  3. Add tomato, 3 cups water and remaining stock pot mixture to saucepan. Br ing to the boil. Reduce heat to medium. Add pasta and simmer for 10 minutes or until pasta is tender , adding vegetables and meatballs halfway through.
  4. Divide minest rone among bowls. Serve topped with parmesan.
