Combine perfectly sweet cherry tomatoes, rich extra virgin olive oil and al dente pasta for an easy, appetising entertaining platter.
Ingredients
- 2 tbs Monini Classico 100% Italian Extra Virgin Olive Oil
- 2 cloves of garlic, finely chopped
- 800g Mutti Cherry Tomatoes
- 1 teaspoon raw sugar
- 300g dried spaghetti
- 1/3 bunch basil, leaves picked, large leaves coarsely torn
Cooking Method
- Heat half of the oil in a medium saucepan over medium heat. Add garlic and cook, stirring, for 30 seconds or until fragrant. Add tomato and sugar and stir to combine. Reduce heat to medium-low. Simmer for 15 minutes or until reduced just slightly.
- Meanwhile, cook pasta following packet instructions. Drain. Transfer to a serving platter.
- Add half of the basil to the tomato sauce. Toss gently to combine. Spoon sauce over pasta. Scatter with remaining basil. Drizzle with remaining oil. Serve immediately.
