Grilled Haloumi & Peach Salad with Thyme Olive Dressing

This vibrant grilled haloumi and peach salad, drizzled with an aromatic thyme oil, will become your summer soiree staple.

Ingredients:

  • 2 slices sourdough
  • 180g haloumi
  • 2 peaches
  • 125g cherry tomatoes
  • 1 lime
  • 1/2 cup Extra Virgin Olive Oil
  • 1 clove garlic, crushed
  • 1/4 punnet thyme leaves
  • 1 red onion, thinly sliced
  • 120g baby rocket leaves

 

Method:

Step 1 of 3
Cut sourdough into 1cm pieces. Slice haloumi into 0.5cm slices. Cut peaches into wedges. Halve cherry tomatoes. Zest and juice lime. Toss sourdough with 2 tbs oil.

Heat a chargrill over medium-high heat. Add sourdough and cook for 1-2 minutes or until golden. Add haloumi and cook for 1-2 minutes each side or until browned. Add peaches to grill and cook for 1-2 minutes each side or until browned.

Step 3 of 3
Combine garlic, lime juice and zest, thyme leaves and remaining oil in a jug. Toss sourdough, tomato, onion and rocket with dressing. Serve topped with haloumi and peaches.
